Apple Crumble Muffins

I wanted to enjoy sweets on Thanksgiving but couldn't have any gluten or dairy at the time because I was working with a dietitian for my gut issues. So, on the day of Thanksgiving I came up with these delicious Apple Crumble Muffins to enjoy the morning of. They were an amazing start to the busy cooking day, but I made sure to make enough to enjoy at the end of the night as well! They are gluten free and dairy free, yet PACKED with flavor. I actually ended up making them twice because they didn't turn out the way I wanted to the day of, so I made another batch the next day and they were much better. The one thing I do want to mention is that since they are apple crumble pie-like they are a bit moist on the inside, which is how I wanted them to be! So let’s get to it.


Yields: 12 muffins

Prep time: 20 minutes

Total time: 45 minutes


This recipe is dairy free, gluten free, and vegetarian.

 

Ingredients:

Dry ingredients:

2 cups of GF flour

1 cup of GF oats

⅓ cup of brown sugar

1 TBSP baking powder

1 ½ TSP cinnamon

1 TSP nutmeg


Wet ingredients:

1 cup of almond milk

2 eggs

1 TSP vanilla extract

1 TBSP maple syrup


Separate steps:

3 apples

Maple syrup

Coconut oil

Baking spray

 

Instructions:

1. ⁣First, preheat the bottom oven to 350.

2. Next, peel the apples and chop them up into cubes and set them aside.

3. Next, combine all the dry ingredients together in a bowl.

4. Next, combine all the wet ingredients together in a separate bowl and make sure to whisk them well since it includes the eggs.

5. Next add the wet ingredients into the dry ingredients and mix well. Leave the to the side. 6. Now in a medium sized frying pan, add in 1 spoonful of coconut oil and once it melts add in the chopped apples and sprinkle on cinnamon and drizzle on maple syrup. Caramelize well and then add them into the bowl of mixed ingredients then mix them again.

7. Spray down the muffin tray with baking spray and then add batter into each muffin tray in equal amounts - do not overflow the batter leave an inch of space for them to rise properly.

8. Bake for 20-25 minutes. Enjoy!
