You do not have to spend $12 on a plain ol' turkey sandwich when you can make your own. This is my way I've built my turkey sandwiches for lunch and it never fails me. Don't let anyone tell you that sandwiches can't be healthy and nutritious, it's basically a bread salad. I always aim to build a balanced sandwich the way I would build a salad. You have protein from the cheese and turkey breast, healthy fats from the avocado, fiber from the tomato and arugula, and carbs from the sourdough. It's not only perfectly balanced, but it is flavorful and easy to make. You're going to need less than 15 minutes to make it and you'll be left with an artisan-style sandwich. Let's get to the recipe!

Total time: 15 minutes
This recipe can be dairy free by opting out of the cheese.
Ingredients:
2 slices sourdough bread
3 slices pepper jack cheese
Arugula
1 tsp extra virgin olive oil
½ lemon
Dash of salt
½ avocado
4 slices turkey breast (I use the brand Applegate)
½ tomato, sliced into three thin rounds
Instructions:
1. Toast bread: toast the two slices of bread. Once there's 1 minute left gently remove one slice and layer on the pepper jack cheese and toast until cheese melts.
2. Prep arugula, avocado, tomato: in a small bowl add in 1 handful of arugula. Drizzle on olive oil, a squeeze of lemon juice, and a dash of salt. Mix arugula well. Place tomato slices onto a paper towel and sprinkle on salt. This will remove the fluid from the tomatoes so you end up with more firm, concentrated tomato pieces. Have the avocado mashed in a bowl.
3. Build: grab the two slices of toast. Add the mashed avocado onto the slice with no cheese. Add the arugula onto the slice with the cheese. Add the turkey slices. Add the tomato slices. Add the slice with the avocado on top. Slice in ½ and enjoy!
