Chicken Avocado Salad with Homemade Croutons



Like I said, this is caesar salad's hot second cousin - they're kinda related but not too similar. This Chicken Avocado Salad is so creamy and crunchy and I can't wait for you guys to give it a try. You have a base of lettuce, then cucumbers, jalapeño, olives, avocados, and a dijon mustard based dressing.

The addition of homemade croutons adds the crunch and some carbs our bodies need!


This salad has crunch, creaminess, and a kick of flavor from the jalapeño and dijon. It's a flavorful salad you can make in under 15 minutes and take with you on the go. You can also opt to add another carb source like quinoa if you'd like. Let's get to the recipe!

This recipe is dairy free.

 

Ingredients:

1 chicken breast, boiled and shredded

2 handfuls baby lettuce, chopped

1 cucumber, finely diced

½ jalapeño, finely diced

½ cup Castelvetrano olives, chopped in halves

½ avocado, finely diced

1 slice sourdough bread, chopped into cubes

Extra virgin olive oil

Juice of ½ lemon

Dijon mustard

Salt and lemon pepper

 

Instructions:

1. First, have your chicken cooked and shredded. You can prepare this anytime and store it in the fridge or use a rotisserie chicken to make your life easier (it's always up to you).


2. Grab a mixing bowl and add in the prepared ingredients 2-6. Add in the chicken as well.


3. Preheat your oven or toaster oven to 350. Chop 1 slice of sourdough bread into cubes and place onto a baking sheet. Drizzle on olive oil and season with salt & black pepper to taste. Mix the olive oil/seasonings into the bread with your hands. Bake until crispy, they need about 7-8 minutes. These will be your croutons!


4. Prepare the dressing: pour 2 TBSPs of olive oil into a bowl, juice of ½ lemon, 1 TSP or so of dijon mustard, salt to taste, and ¼ TSP lemon pepper. Mix well.


5. Let's put it all together: pour the dressing into the mixing bowl. Mix the ingredients in with the dressing well until you get an even consistency. Grab a serving bowl and choice and add the salad in. Add the croutons on top. Enjoy!
