Cinnamon Oat Baked Apples with Ice Cream

I will say that I am not much of a baker, but I can make delicious recipes with apples. Hence why fall is truly my favorite season. These are my Cinnamon Oat Baked Apples with Ice Cream, and they are not only sweet and delicious, but so easy to make in a crunch.


This is such a great way to use the apples you got while apple picking and a fun way to get some fiber into your diet. My mind is always focused on fiber because most Americans do not get enough from their diet. Fiber intake is key for proper digestive health and heart health, so as a future registered dietitian, I want to ensure you get enough from your food! So, why not incorporate fiber-packed ingredients into a delicious dessert? This way you can enjoy the foods you love, like apple crisp, and get some good-for-you nutrients in as well! The oats, walnuts, chia seeds, and apples are great sources of fiber, which is why I chose to incorporate these ingredients together. You can make this for yourself or as a dessert to serve some friends that are coming over for a fall-time dinner or even Friendsgiving.


You're going to need sweet apples like honeycrisp apples, oats, walnuts, cinnamon, nutmeg, maple syrup, chia seeds, and butter. Let's get to it!


Yields: 1-4

Prep time: 15 minutes

Total time: 30 minutes


This recipe is gluten free and vegetarian.

 

Ingredients:

4 sweet apples (Fuji or honeycrisp work)

1 TBSP unsalted melted butter

2 cups Gf oats

1 TBSP chia seeds

1 TBSP cinnamon

¼ TSP nutmeg

¼ cup crushed walnuts

¼ cup maple syrup (or more if you enjoy sweetness)

Honey to garnish

French vanilla ice cream

Coconut oil spray

 

Instructions:

1.First, preheat your oven to 375 OR use your air fryer (it's up to you - I air fried mine)


2. Slice your apples in half through the stem and scoop out the interior of each halved apple without breaking the skin. You want them looking like apple bowls. Don't throw out the insides of the apples, place them into a mixing bowl.


3. Place the apples onto a baking sheet with parchment paper.


4. In that mixing bowl, add in the oats, butter, chia seeds, cinnamon, nutmeg, crushed walnuts, and maple syrup. Mix it all together and check the consistency, if it seems to be too dry add more maple syrup or melted butter. You want the batter to be soft and slightly moist.


5. Fill each apple with the oat filling. Any leftovers? Save them for the next day or core another apple if you have one.


6. Spray the stuffed apples with coconut oil and bake until the apples soften and the oats turn a medium brown color. They won't need more than 15 minutes in the oven.


7. Gently take them out and add ice cream to your liking and drizzle fresh honey.


8. Enjoy!
