Crispy Buffalo Chicken Tacos

WHO doesn't love buffalo sauce AND tacos? You know I had to combine the both. These are my Crispy Buffalo Chicken Tacos and I cannot wait for you to give them a go. They are the ultimate comfort food and I made sure to add some nutrient-filled goodies like black beans, bell pepper, red onion, jalapeño, scallion, and avocado.


They are such a simple concept for dinner and it's definitely something you can whip up any night you aren't sure what to make or are having friends over. You can pair the tacos with my homemade guacamole recipe or my mango salsa recipe!


Tacos are an undervalued food in my opinion because they can be a great balanced meal without even realizing it. You have carbs from the tortillas, fiber from the black beans, red onion, avocado, and bell pepper, healthy fats from the avocado and cheese, and protein from the chicken and black beans. How can you go wrong?!


Yields: 3

Portion: 2 tacos


Prep time: 1 hour (for chicken to cook, but if it's already been prepped, only 15 minutes of prep)

Total time: 1 hour and 40 minutes (if chicken has been prepped, total time is 55 minutes)


This recipe can be made gluten free by using corn tortillas.

 

Ingredients:

2 chicken breasts, boiled and shredded

1 can of black beans, drained and washed

¼ green bell pepper, finely diced

2 TBSPs finely diced red onion

Buffalo sauce (I use Primal Kitchen, but it's up to you!)

5 mini flour tortillas

Shredded Mexican cheese

Olive oil/avocado oil spray

½ avocado sliced thinly to garnish

½ jalapeño sliced thinly to garnish

1 scallion finely diced to garnish

Salt

Fresh cilantro to garnish (I didn't have any but it would be a great addition if you'd like)

Extra virgin olive oil

 

Instructions:

1.First, make sure your chicken is prepped and shredded. Preheat the oven to 400.


2. Have the black beans, bell pepper, and red onion ready. Grab a large frying pan and pour in 2 TBSPs of extra virgin olive oil on medium high heat. Add in the red onion and green bell pepper and sauté. Once you can smell the red onion, add the shredded chicken and black beans. Sauté well. Pour in your desired amount of buffalo sauce. It depends how spicy you like your food! A recommended amount would be ¼ cup, so do more or less. Mix it in well and salt to taste.


3. Once the red onion and bell pepper have soften, turn the heat off.


4. Grab a baking sheet and add parchment paper to the sheet. Grab 5 tortillas and layer on cheese onto one half of the tortilla. Layer on an even amount of chicken & beans onto each tortilla (make sure you leave enough for 5 tortillas). Repeat this step for 5 tortillas, layer on cheese and the chicken & beans. Close each tortilla and spray avocado oil or olive oil spray on top of the tacos to ensure they cook well.


5. Bake in the oven for up to 20 minutes. You want the crust to be crispy and the cheese to be completely melted. Have the jalapeño, scallion, and avocado prepared to garnish. Place tacos onto a serving plate and garnish. Add fresh cilantro if you'd like. Enjoy!
