"Okay I have died and gone to heaven." - My next door neighbor when she took a bite of these delicious, homemade, Date & Walnut Stuffed Apples I made. Dates, walnuts, brown sugar, cinnamon, nutmeg, and maple syrup: all of the perfect ingredients to incorporate into fall-inspired desserts. I got these apples from my local farm, and decided to empty the middles of them out and stuff them with a sweet date-based stuffing. I baked them in the oven, poured maple syrup on top, and sprinkled a bit of cinnamon sugar to top them off. You cannot go wrong with this recipe for any fall get-together you're hosting, and it is especially perfect for Thanksgiving! Make these for any occasion, and the people around you are going to die for them just like my neighbor did. So, if you want the full recipe, keep reading!

Ingredients:
8 sweet apples (either Fuji, honeycrisp, or gala apples are best)
1 cup of walnuts, crushed
Ziyad Brand Baking Dates
1 cup of brown sugar
3 eggs
3 TBSPs of all purpose flour
1 TSP cinnamon
1 TSP nutmeg
2 TSPs vanilla extract
1/2 TSP baking powder
Coconut oil
Optional: Maple syrup as garnish
Optional: Cinnamon sugar as garnish
Instructions:
1. First, preheat your oven to 350.
2. Now, grab 8 apples and chop off the tops (I tried to show in the pictures how far I cut into the apples).
3. Next, scrape out the interior of each apple, but don't go too deep and too thin around the edges because you don't want them breaking in the oven. (that is what happened to me the first time I made them).
4. Now, for the stuffing: in a bowl add ingredients 2-10. With a baking spoon, mix the ingredients well together until they are one consistency.
5. In a 9x9 baking dish, add the mixture in. Make sure it's leveled.
6. Bake in the oven until it is well-cooked through. Use a fork poke holes; if the mixture sticks to the fork it is not ready yet.
7. In another baking pan, add the apples in. Have 1 TBSP of coconut oil melted and pour it onto all the apples. Sprinkle on cinnamon and nutmeg to your liking. A little goes a long way with these spices.
8. Bake in the oven for about 20-30 minutes with the tops on the apples. They will be done once the exterior has become light brown and softer. You can test out one apple by using a fork to see how much it has softened.
9. Take both the date & walnut mixture and apples out of the oven. Gently with a fork, mash the date mixture well, and start stuffing each apple with the date & walnut mixture.
10. Once you've done that to each apple, place them back in the oven for 5 minutes.
Gently take them out, and place them onto a plate.
11. It is optional to add maple syrup and cinnamon sugar as garnish.
