Date & Apple Chocolate Bark


I’m a dietitian who bought skittles and Hershey’s for the trick or treaters tonight but I’m making you all Date & Apple Chocolate Bark because we’re "adults" now, so it’s frowned upon to eat a bag of chocolate, I guess. This is a great way to use the dates sitting in your fridge that you grabbed at Trader Joe's one time and the apples you grabbed while apple picking. It’s a delicious way to get some fiber in when you’re craving something sweet. 


I'm not one that loves to bake, but these were incredibly easy to make, mess-free, and bake-free. You only need six ingredients and if you're having people over, it can be the easiest dessert to whip up in no time. My biggest tip though is to keep the bark frozen to ensure the apples don't become soggy. The bark is most enjoyed served cold!

Portion: 1 piece of bark


Prep time: 20 minutes

Total time: until frozen


This recipe is dairy free, gluten free, and vegan (if you use vegan chocolate chips).

 

Ingredients:

12-15 dates

½ honeycrisp apple, sliced finely with mandolin

1 cup semi sweet chocolate chips

1 tbsp coconut oil

2 tbsp creamy almond butter

¼ cup crushed walnuts

 

Instructions:


1. Prep dates: grab parchment paper and set it onto a baking sheet. Gently open the dates up and flatten them in your hands. Place them onto the parchment paper so that have 6 columns of 5 dates. You want to stack them close to each other so that when you pour the chocolate there are not large gaps.

*Pro tip: if you have a rolling pin, layer on parchment paper onto the dates and gently roll out the dates this way they are completely flattened.


2. Add apples: layer on apple slices onto dates (6 slices per row).


3. Prep the chocolate: pour the chocolate chips into a bowl with coconut oil and microwave until the chips fully melt. Stir the coconut oil in well with the chips to ensure they've fully melted.


4. Add chocolate: gently pour the chocolate onto the date & apple and use a rubber spatula to ensure each peach is evenly coated with chocolate. Drizzle on the almond butter as seen in the picture on the left. Sprinkle on crushed walnuts evenly throughout chocolate.


5. Freeze: freeze the bark until the chocolate is solid. I allowed it to sit overnight.


6. Serve: once the chocolate is frozen, gently take it out of the freezer and break the bark up with a knife (gently) so that you have 4 pieces of date & apple bark. Enjoy!
