Honey Balsamic Peach & Burrata Salad

I'm welcoming you to my new series called, "We Have Food at Home" because we should learn to use up the food in our fridges before grabbing more groceries or eating out. As a content creator I do get overwhelmed sometimes trying to figure out what recipes to make for you guys, so I thought to myself, why not start making recipes on a whim that way the recipe is naturally made and I use food that's sitting in my fridge, instead of going out and buying things just to make one or two recipes. This way you also get to see how I come up with recipes for myself that are still balanced and nutrient-dense.


This third recipe of this series is my Honey Balsamic Peach and Burrata Salad and now I understand the hype for combining peaches and burrata. I grabbed burrata last week at Trader Joe's because it's officially summer and I can't walk out of the grocery store without grabbing a tub of it. But, I knew it was going to expire before I got to use it, so I knew it had to be part of today's lunch. Luckily, I had peaches so I wanted to give this combo a go. My goal was to make a sweet and savory kind of recipe, so that's why I combined burrata with red onion for the savory-ness, and honey and peach for the sweetness.


When I tell you, I felt like I was sitting in a 5 star restaurant while eating this... it's a salad that a rooftop restaurant in Boston would charge $30 for because they can. This is a salad you can make for approximately $5-6 a serving at the comfort of your own home instead. Best part is, it's beyond easy to make and quick enough to make during a work or school break during the weekday. Imagine you just came out of a meeting and you make yourself this... it's going to make your summer day indoors even better. You can also whip this up for yourself on a weekend or double/triple to make for you and friends.


I purposely didn't chop up the veggies to give it more of a "fancy" energy, but you can choose to do so if you'd like. Also, if you don't have peaches but are really dying to make this salad, strawberries would also pair well with the rest of the flavors in this recipe. I can't wait for you to try it!

Prep time: 10 minutes

Total time: 15 minutes


This recipe is gluten free and vegetarian.

 

Ingredients:

Handful arugula

Extra virgin olive oil

Salt

1 peach, sliced into wedges

½ medium tomato, sliced into wedges

¾ avocado, sliced into wedges

Red onion, thinly sliced

8 oz burrata, at room temperature (allow to sit on the counter for 15 minutes)

1 ½ tbsp honey

⅓ cup extra virgin olive oil

1 tbsp balsamic vinegar

Salt and black pepper to taste

Fresh basil, chopped chiffonade to garnish

 

Instructions:

1. Prep veggies: add arugula to a bowl and drizzle on olive oil and sprinkle a pinch of salt. Mix in well into arugula. Add tomato, peach, and avocado onto arugula. Distribute evenly throughout bowl. Add red onion. Break the burrata and add on top.


2. Dressing: add honey, olive oil, balsamic vinegar into a small bowl. Add dash of salt and black pepper. Mix well. Dilute with a splash of water. Taste and adjust salt.


3. Serve: garnish with basil. Enjoy!
