Parmesan Delicata Squash Fries

No need to Uber Eats some fries, make these yourself with all of the ingredients you already have at home! These are my Parmesan Delicata Squash Fries and they make for a great side dish next to any dinner this fall and winter. Since delicata squash is in season I thought this is the best produce to use to make some fries. Now this is not me telling you that you can’t enjoy regular ol’ potato fries, NO. This is me showing you that your recipes can be switched up from time to time so you feed your body new sources of food and nutrients.


You can pair these fries with a balanced meal or enjoy them as a snack. They are a healthier alternative to fried french fries since they are baked so I highly recommend trying to make them at home if you haven't already.


I’d like to note that I enjoy my fries more on the crispier, toasty side so I allowed them to bake until I saw the edges turn a little burnt. I also saw this trend on TikTok where people cover each fry with Parmesan and then allow them to bake so you get an even crispier and Parmesan-filled bite, so it’s up to you! If you’d like to do that, grate fresh parmigiano into a bowl (about 1 cup) and dip each fry into the bowl so each fry is evenly coated. This is a delicious alternative for you if you’d like to try it. Otherwise, stick to the recipe down below and let’s get cooking!


Yields: 2

Portion: 1 cup of fries


Prep time: 15 minutes

Total time: 40 minutes


This recipe is gluten free and vegetarian. This recipe can be made vegan without the addition of parmesan.

 

Ingredients:

1 medium delicata squash

2 tbsp extra virgin olive oil

½ tsp salt

¼ tsp lemon pepper

1 tsp paprika

1 tsp garlic powder

⅛ tsp chili powder

2 1/2 tbsp Parmigiano reggiano

Garnish with finely diced fresh parsley

Optional: Maldon salt garnish

 

Instructions

1. Preheat oven: preheat oven to 425 and line a baking sheet with parchment paper.


2. Prep squash: wash squash and chop the top and bottom of the delicata squash. Gently slice squash lengthwise and scoop out the seeds with a spoon. Continue to slice the delicata squash halves lengthwise to create thin fries. They should be ½ inch thick.


3. Season squash: coat squash fries with olive oil and season with salt, lemon pepper, paprika, garlic powder, and chili powder. Coat with freshly grated parmigiano reggiano (2 tbsp). Mix well and add to baking sheet. Ensure the fries are spread out evenly on the sheet to evenly cook.


4. Bake squash: bake squash fries for 25-30 minutes, flip half way to allow them to crisp up.


5. Serve: allow fries to cool for two minutes and garnish with ½ tbsp reggiano, parsley, and Maldon salt. Enjoy with a sauce of choice if you'd like!
