Pumpkin Spice Protein Energy Balls


You've told me that I don't bake enough for you, so here is me trying. These are my Pumpkin Protein Energy Balls that are perfect to enjoy this fall season. You get a delicious kick of flavor from the pumpkin spice and cinnamon while reaping some nutritious benefits. These balls are made of oats, pumpkin puree, and chia seeds, which are all sources of fiber that helps support our digestive health and heart health. The energy balls are also made of healthy fats that help stabilize our blood sugar and support our heart health - your peanut butter and chia seeds. Since I wanted you to snack on something that could make for a good post workout snack, I added some protein powder in. You can't even taste it.


You can feel free to enjoy these the day you make them or store them in the fridge to enjoy throughout the week. Take them with you on the go too!


Yields: 4

Portion: 2 energy balls


Prep time: 15 minutes

Total time: 45 minutes


This recipe is dairy free and vegetarian.

 

Ingredients:

1 cup rolled oats

¼ cup pumpkin puree

¼ cup peanut butter (or any nut butter)

2 tbsp date syrup (or maple syrup)

1 scoop Vital Proteins collagen powder

1 tsp pumpkin pie spice

1/2 tsp cinnamon

1 tbsp chia seeds

¼ cup mini dark chocolate chips

 

Instructions:

1. Mix: in a bowl, mix together the oats, pumpkin puree, peanut butter, date syrup, pumpkin spice, cinnamon, and collagen powder until well combined. Stir in chia seeds and mini chocolate chips.


2. Roll into balls: wet your hands to help roll the mixture into bite-sized balls. Add to a plate. Place the energy balls into the fridge for 30 minutes.


3. Serve: enjoy after 30 minutes or store in the fridge to enjoy another day.
