Roasted Hot Honey & Feta Carrots

This is another Back to Basics recipe and this time we are leveling up our carrots. These are my Roasted Hot Honey & Feta Carrots and you are not only going to love how they delicious they are, but how simple and quick they are to prep. To make these carrots all you need is olive oil, salt, hot honey, feta, and parsley. If there isn't parsley in one of my recipes, just know it isn't me and someone took over my page. Now, I've gotten asked what hot honey is... it's just spicy honey! It adds such a great taste of flavor to foods you love like flatbreads, pizza, toasts, salads, etc. Imagine how delicious the spicy honey and the feta are going to be when they're combined. It gives me sweet, salty, and spicy energy and you're going to love it.


These carrots are perfect to serve as an appetizer, but they are also a great veggie side to add to a dinner recipe. When I say "veggie side" I mean like you have (for example) baked chicken breast and rice but know you need a source of color and fiber. So, you opt for making these carrots! See what I mean? No matter how you enjoy them, I know you'll love them. So, let's get to it!


Yields: 2

Portion: 1 serving of carrots


Prep time: 10 minutes

Cooking time: 30 minutes

Total time: 40 minutes


This recipe is gluten free and vegetarian.

 

Ingredients:

4 large carrots, chopped large

2 tbsp extra virgin olive oil

½ tsp salt

1 tbsp hot honey

¼ cup (or more) feta crumbles

Fresh parsley to garnish

 

Instructions:


1. Prep carrots: peel and chop the carrots. Place them into a baking dish. Add the olive oil, salt, hot honey, and feta crumbles. Mix well. Add extra feta on top if you'd like.


2. Bake: Have the oven preheated to 400. Bake carrots until completely roasted and a fork can be pierced through easily.


3. Serve: garnish carrots with fresh parsley. Enjoy!
