These Shrimp & Avocado Slaw Tacos are what summer dreams are made of. At first, I wanted to just make the avocado slaw and have it with some tortilla chips, but then I realized I could have them into a full meal so that’s where I paired some shrimp with them to make some tacos. Not only is this an easy dinner option for you, but this is the kind of recipe that is versatile. You can enjoy the avocado slaw on its own with some chips, you can pair with some chicken on the side with some rice, or you can serve it over some salmon. It’s savory and herby and you’re going to love it.

This recipe is dairy free, gluten free, and pescatarian.
Ingredients:
15 cooked jumbo shrimp
6 avocados, chopped into cubes
2 cucumbers, finely diced
12 Castelvetrano olives, chopped into thin slices
½ red onion, finely diced
¼ cup finely chopped fresh cilantro Juice of 4 limes
Extra virgin olive oil
Salt
Adobo seasoning
Paprika
Black pepper
Corn or flour tortillas
Instructions:
1. Prep slaw: add avocado, olives, cilantro, cucumber, red onion into a mixing bowl. Add juice of 2 limes and salt to taste. Set aside.
2. Prep shrimp: have shrimp defrosted & dried well. Add to a bowl and add juice of 2 limes. Add ½ tbsp adobo seasoning, paprika to coat with color, and black pepper to taste. Mix well.
3. Cook shrimp: in a frying pan, add 1 tbsp olive oil on medium high heat. Once you can smell the oil, add shrimp in. Allow them to be evenly spread out so they cook well. Cook on each side for 2-3 minutes. The tails should be bright red when fully cooked.
4. Serve: grab two plates and 6 tortillas. Evenly distribute the avocado slaw onto each. Add shrimp on top. Garnish with fresh cilantro & lime juice. Enjoy!
