Spicy Veggie Hummus Sandwich

Spring is here and that means ~sandwiches & wraps~. The second it gets warmer, my body starts craving a sandwich, so I am here presenting you with my Spicy Veggie Hummus Sandwich. This is the perfect sandwich for my vegetarians and vegans that never feel like they know how to make a good and satisfying sandwich for themselves.


You have ciabatta as the carb source, harissa as the spice & satisfaction factor, hummus as the spread and source of protein, and tomato/cucumber/mixed greens as the source of fiber. It's a balanced sandwich that can be enjoyed at home during a workday, brought on the go for school, or pre-made for a picnic since it's getting warm out!


It takes less than 15 minutes to make and requires no cooking! The combination of harissa and hummus is delightful and I'm so excited to have you guys try this one. Let's get to the recipe!


Yields: 1

Portion: 1 sandwich


Prep time: 10 minutes (20 minutes if you're making your own hummus)

Total time: 15 minutes


This recipe is dairy free and vegan.

 

Ingredients:

1 ciabatta roll

1 plum tomato, thinly sliced

1 cucumber, thinly sliced

1 TBSP harissa (more or less depending on your desired level of spice)

Mixed greens (if you don't have mixed greens you can do lettuce, spinach, or arugula)

Salt

Lemon pepper seasoning

 

Instructions:

1.First, toast your ciabatta.


2. While you are waiting on the ciabatta, have ingredients 2-6 ready. If you want to make your own hummus, follow my recipe on my blog. Grab a serving plate of choice and add on the ciabatta.


4. First, spread on your desired amount of hummus onto one side, I would say approx. 2 TBSPs worth of hummus. Next, layer on the mixed greens, tomato, and cucumber. Season with salt and lemon pepper to taste. On the other ciabatta slice, spread on 1 TBSP of harissa.


5. Add the slice with the harissa onto the veggies to create a sandwich. Slice in half and enjoy!
