Sumac Cabbage Slaw


The reason why I love my Back to Basics series is because I help you look at foods like vegetables and grains differently. If you ask someone what they can do with a head of white cabbage, they may not know what to use it for! So, today I'm showing you a different and delicious way to incorporate this gut-healthy veggie into your day-to-day. This is my Sumac Cabbage Slaw, and it's the freshest slaw you'll ever have. The best part is, you only need olive oil, lemon, salt, sumac, and garlic to make it - basically ingredients you'll have in your pantry and not have to go to the market for.


You can opt to build a yummy salad like I did, you can add it to the side of burgers you're going to have this summer, you can add it inside of wraps or sandwiches, or you can opt for eating it alone (that's how I love to eat it). Either way, cabbage is such an easy veggie to use and keep in your fridge. Cabbage is filled with fiber that is made of prebiotics - aka food for your existing gut bacteria. We want to ensure we feed the pre-existing healthy gut bacteria to keep our gut microbiome functioning optimally. So, make this Sumac Cabbage Slaw in under 10 minutes and add it to any meal for that great source of fiber! Let's get to it.


Yields: 1-5

Portion: 1 cup


Prep time: 5 minutes

Total time: 10 minutes


This recipe is dairy free, gluten free, vegan.

 

Ingredients:

4 cups thinly sliced white cabbage

3 tbsp extra virgin olive oil

½ tsp salt (or more to your liking)

1 tsp sumac

2 cloves garlic, minced

 

Instructions:

1. Prep cabbage: thinly slice cabbage and add to a mixing bowl.


2. Season: add olive oil, salt, sumac, and garlic. Mix well. Taste test for salt or sumac, add more if necessary.


3. Serve: serve alone, add to salads, or into wraps. Enjoy!
