You're probably saying to yourself, "why is Jasmin writing a recipe for a big bowl of red onions...?" You know why? Because they are going to bring SO much flavor into your next fish dinners, chicken dinners, or salads. This is going to be the veggie source you add to bring some aromatics to your plain ol' dinners. These are my (and my people's) Sumac Marinated Onions.
I definitely did not come up with this recipe because it has been done for generations. If you recall one of my recipes back from Ramadan, I made a recipe called "Musakhan" and it's sumac, onions, and chicken. Sumac onions are used for many Middle Eastern dishes to add a delicious kick of tangy flavor, without having to do much work. All you need for the recipe is red onion, sumac, lemon, olive oil, Aleppo pepper, and salt. You can make this in under 5 minutes and allow it to sit in your fridge for the night to marinate and use in a recipe the day later. OR, you can use it up front to spice a meal up. Just make sure you allow it to sit in the fridge for at least 30 minutes before serving.
The best part is, this is going to be an amazing source of prebiotics for your gut. Prebiotics are FOOD for our existing gut bacteria, and they love onions. So, I'd call this a gut-healthy encouraging food. I call it encouraging because it's supposed to help your gut flora, but may irritate some with IBS. So, just be wary of that! The lemon juice actually helps break down the gas in the onion, so that's why the marinating is key. Let's get to it!

This recipe is dairy free, gluten free, and vegan.
Ingredients:
1 large red onion, thinly sliced
1 tbsp extra virgin olive oil
½ tbsp sumac (you can add more if you like) 1/4 tsp Aleppo pepper
1/4 tsp salt (salt to taste if needed)
Instructions:
1. Prep the onion: prep and place the thin strips of red onion into a serving bowl of choice.
2. Add ingredients: add the olive oil, sumac, Aleppo pepper, and salt to the onions. Toss and allow onions to be coated evenly.
3. Marinate: allow onions to marinate in the fridge for at least 30 minutes before adding to food. Enjoy!
