Sweet Potato Protein Bites

Great things come in small packages and these little guys are packed full of nutrients. These are my Sweet Potato Protein Bites and they make for a great post workout snack. Of course, you can enjoy them however you want but I came up with these so you have a nutrient-dense snack to fall back on when you're not too hungry for lunch but still want something small. Like I said, they are also great for after a workout because its a great source of carbs and protein, which your body wants after exercise.


So, some people prefer feta over cottage cheese and vice versa, so I made both for you. These snacks are made with a sweet potato base, avocado topping with either cottage cheese or feta, some chopped cherry tomatoes, and spicy chili crunch for an extra kick of flavor. If you don't enjoy spice, please opt out of the chili crunch!


Yields: 7

Portion: 3 sweet potato toasts


Prep time: 15 minutes

Cooking time: 25 minutes

Total time: 40 minutes


This recipe is gluten free and vegetarian.

 

Ingredients:

2 sweet potatoes, chopped into 1 inch rounds

Extra virgin olive oil

Salt and black pepper

2 avocados

3 tbsp feta crumbles

3 tbsp cottage cheese

12 cherry tomatoes, thinly sliced

Optional: Chili crunch oil (it's delicious but pretty spicy)

 

Instructions:

1. Prep potato slices: thoroughly wash potatoes. Slice potatoes and place onto baking sheet. Coat with olive oil. Season with salt and black pepper. Mix into each slice well. Bake on 400 until crispy or for 25 minutes. Flip half way.


2. Prep toppings: mash 1 avocado into a one bowl and the other avocado into another bowl. Add feta into one bowl and cottage cheese into the other. Mix both well. Evenly distribute chopped tomato to each bowl. Salt to taste. Mix well and set aside.


3. Serve: gently remove sweet potato from oven. Evenly distribute both avocado mixes onto each sweet potato round. Since chili crunch is spicy, feel free to opt out of adding it, but if you enjoy spice, please garnish each bite with a small drizzle. Another option is chili extra virgin olive oil, which could be more enjoyable. Enjoy!
