Viral Labneh Sandwich

This viral labneh sandwich is going viral for a good reason! This is the type of sandwich I used to take to school each morning and I'm so happy you all get to enjoy it now as well. Simple pita wraps are usually just labneh, zaatar, and olive oil. But, this one has some fun twists like the crispy zaatar pita inside the whole pita.


I obviously had to add my special touch, which was the seared halloumi. This adds a bit more protein and flavor into the sandwich. It's a perfect breakfast or lunch option for anyone to enjoy, especially if you are vegetarian.


You can find quality pita at your local Middle Eastern, Armenian, Indian markets. You're going to want the large loaves, not the mini ones. As for the labneh, olives, zaatar, and halloumi, you can also find these there. Let's get to it!

Prep time: 10 minutes

Total time: 15 minutes


This recipe is vegetarian.

 

Ingredients:

1 pita

1 tbsp zaatar

2 tbsp extra virgin olive oil

Halloumi, 4 slices cut into 1 inch thick pieces

2 tbsps labneh (or more if necessary)

½ cucumber, sliced thinly

½ tomato, sliced into half moons

Olives, sliced in halves

Aleppo pepper to taste

 

Instructions:

1. Preheat oven and prep the pita: Preheat oven to 375F. Gently open up the pita bread so you have two wraps. On one pita, drizzle on the olive oil and sprinkle the zaatar. Mix the two together onto the pita. Toast in the oven until crispy.


2. Sauté the halloumi: in a frying pan, add in 4 slices of halloumi. Toast on each side for 2 minutes each. Set aside.


3. Prep the other pita: Spread on labneh onto the pita evenly. In the middle of the pita, layer on the cucumber, tomato, and halloumi. Sprinkle on olives. Season with Aleppo pepper.


4. Add the crispy zaatar: gently place the crispy zaatar pita on top of the labneh pita and crush it gently.


5. Wrap: wrap the whole pita gently like a burrito, make sure the ends are closed. Slice in half and enjoy!
