This is the holiday series you all needed in your lives but this time we're doing it with a friend. My friend Jenn from Jenneatsgoood on social media collaborated this holiday season to bring you all a holiday dinner menu that accommodates most allergens/diets and price. We turned a $50 grocery list into a delicious and nutritious dinner that will serve 4 people. We've included one appetizer, one salad, one entree, one dessert, and one mocktail. They are a blend of dairy free, gluten free, and vegetarian recipes that can be easily customized to your liking. I provided the examples in each recipe down below.
It's the perfect dinner to make for your family of 4 or friends that you planned to have over within the next few weekends. I'd like to mention that all of these recipes can be made separately and are perfect for other occasions. For example, I mentioned that the entree can be meal prepped for a work/school week. They are not only perfect recipes for your friends and family, but also realistic recipes for you as well. Jenn and I wanted to ensure we chose ingredients that could be used multiple times within the menu to ensure we took food waste into consideration. We also chose to incorporate winter seasonal ingredients to ensure each recipe was very fresh and nutrient dense. I don't know if Jenn will agree with me, but I think this recipe was my favorite out of all five recipes on our holiday dinner menu. These are our Crispy Artichokes and Greek Yogurt Herb Dip and they are phenomenal. Artichokes are an undervalued vegetable, yet they are packed full with flavor and nutrients.
This appetizer is so flavorful since we did pair the crispy artichokes with the Greek yogurt herb dip. This dip is so refreshing and pairs so well with the crispness and bitterness of the artichokes.
Is there more of a seasonal winter salad than this one? This is our Winter Kale Salad with Beets & Pomegranate. It is a mix of bitter and sweet and you're going to love how easy it is to make.
This is the entree your dairy free friends are going to love you for, this is our Creamy Turkey Pasta with Kale & Mushroom. Can you believe that this is a dairy free pasta recipe? Yes, we used coconut milk to add that creamy texture to the pasta, making it a perfect option for vegans. But Jasmin, there is ground Turkey how is it vegan?! Well, it's an extra step in this recipe that you can completely skip over!
Can you believe that these are a sweet dessert that are completely dairy free, gluten-free, and vegan? These are our Oven Baked Stuffed Pears and your guests are going to love how sweet and flavorful these are. The best part about these are how simple they are to make - all you need are pears, oats, ghee/butter, coconut sugar, cinnamon, and maple syrup. They are all pantry staples that you would have already besides the pears - making your life even easier.
We promise, this is the mocktail that doesn't taste just like juice. This Orange Pomegranate Mocktail is a perfect blend of tart, fizzy, and sweet. It's a seasonal mocktail with pomegranate, ginger, and orange and it's perfect for anyone of any age to enjoy! When Jenn & I tried coming up with a mocktail idea, we wanted something that would compliment the rest of the food.
