I know you may hate me for this recipe because you're thinking, "ugh cottage cheese? I thought we left it back in 2004." Yes, but I'm happy it's having its' come back because its a great source of protein and makes for a great addition to many recipes. This is my Zaatar Cottage Cheese and Avocado Toast, and it puts your everyday avocado toast to shame. Not only is it packed full of protein, but it also has an earthy kick from the zaatar. It's such a quick and easy breakfast to make when you need something filling and balanced but don't have more than 10 minutes before school or work to eat something.

Ingredients :
1 slice sourdough bread
½ avocado sliced thinly
½ cup cottage cheese
Arugula
Fresh mint to garnish (optional)
Zaatar
Salt
Instructions:
1. First toast your slice of sourdough. Prepare the avocado and mint.
2. Let’s put it all together: grab a serving plate and place the toast on top. Layer on arugula, avocado, & cottage cheese. Garnish with fresh mint. Season with salt & zaatar to your liking.Slice in half & enjoy!
