Like I said in my video, when I want to bring a whole cucumber to lunch I get called "foreign," but when some random guy on the internet starts eating full cucumber salads a day it goes viral. I'm not upset, I'm just disappointed. Fully joking, there is nothing I want more than a concept like this to go viral because it gets you all to eat more cucumbers! Cucumbers are 95% water yes, but one cucumber also provides your body with antioxidants like tannins that are going to help reduce oxidative stress (aka aging) and 16% of your daily value of vitamin K. Vitamin K isn't a popular vitamin that's spoken about but it helps your blood clot and keeps your calcium levels in your body in check, so it's key for bone health!
This is my take on Logan Moffitt's cucumber salad, I obviously had to Middle-Eastern it up, so this is my Zaatar and Feta Cucumber Salad. You're going to need a mandoline for this and I'm going to link the one I got because it's the third one I've bought and this one actually works wonderfully. You can always trust everything from OXO.
This is the perfect salad to make when you're in the mood for something quick and easy, but also homemade and fresh. When I made this I had it alone as a mid-day snack but it's also a perfect side salad you can make next to some shrimp, chicken, salmon, really any lean protein source. I know the struggle of not wanting to chop and bake veggies, so lean on this salad when you want your greens in but are not in the mood to do much. You're going to love how flavorful this salad is.

Portion: 1 English cucumber
Prep time: 10 minutes
Total time: 12 minutes
This recipe is gluten free and vegetarian.
Ingredients:
1 English cucumber
Juice of ½ lemon
1-2 tbsp extra virgin olive oil
¼ tsp salt
Pinch of black pepper
1 tsp zaatar
2 tbsp feta crumbles
2 tbsp finely diced parsley
Instructions:
1. Prep: grab your mandoline, cucumber, and mason jar (you can also just use Tupperware, you just want to be able to shake the cucumber and dressing together. Gently slice the cucumber using the mandoline - I recommend leaving 3 inches of the cucumber at the end to not risk an accident.
2. Add dressing: add the lemon, olive oil, salt, black pepper, zaatar, feta, and parsley to the cucumber. Seal the mason jar or Tupperware. Shake very well to evenly disperse the dressing.
3. Serve: pour salad into a bowl. Adjust for salt if necessary. Enjoy!
